Garlic Mayo Sauce

lebanese garlic mayonnaise sauce 
makes approx. 1 cup

ingredients:


3 large cloves garlic + 1 smaller one
1 large egg yolk
1 1/2 tsp (no more than that!) water*
1/4 tsp salt

1 c (8 oz) regular olive oil or blend of vegetable and olive oil

white vinegar mixed with water to equal 3 tbsp OR

juice of 1/2 small lemon

*the water is there to help blend things easily. DO NOT omit it.

method:

have your mise-en-place ready first. you don't have time to run around the kitchen grabbing ingredients.
*i am using an immersion blender here; you can use a regular one. do NOT use a food processor.place the garlic and egg yolk in the mixing bowl (or tall sided immersion blender jar). if you don't trust your blades are sharp enough, you can use a mortar and pestle to grind the garlic to a fine purée with the salt and then add it to the blender with the egg yolk and continue from that point.blend it for a minute just to break up the garlic. it will further break down as you progress.add the salt and the water and mix it for 2 or 3 minutes (pulsing) until is is broken down and blended.

this part is where you need to keep an eye on things. i can't say exactly how long it will take as it depends upon your ingredients and your method.

add the oil now in DROPS and blend in completely after each one, pulsing as you go.
continue to do this until your mixture looks creamy and emulsified. this is the sign of when to add the rest of the oil, slowly in more of a steady stream.add the oil, in trickles and keep blending as you go. it will take some time, maybe up to 10 minutes. have someone hold the emulsion jug if that is how you're doing it or to slowly pour the oil as you blend and hold on to the jar.once all the oil is incorporated, it should look like a whitish very thick mayonnaise.

taste it to see if you need more salt. add a tiny bit if necessary.
now add the lemon juice or vinegar and water mixture in a slow stream until it tastes right to you. you may not need it all, so taste test along the way.refrigerate and use as wanted.

~Chocolate Syrup~


Homemade Chocolate Syrup

1 1/2 cups sugar
3/4 cup unsweetened cocoa powder
1 cup water
dash of salt
1 teaspoon vanilla



In a small saucepan, add sugar, cocoa, and salt.  Whisk together gently.  Add water.  Bring mixture to a boil, stirring occasionally.  Reduce heat and cook 1 minute.  Remove from heat and add vanilla.  Cool.  Store in the refrigerator.

For chocolate milk, add 2 tablespoons chocolate syrup to 8 oz. of milk.  Heat for hot chocolate.
For milk shakes, combine 1 cup cold milk, 1/4 cup chocolate syrup and 2 cups (1 pint) of vanilla ice cream to a blender.  Blend.
This syrup would also make a delicious dessert garnish or ice cream topping.

And….as a special BONUS….I found this recipe for Super Special Chocolate Milk today and I HAD to share it!  It takes “chocolate milk” to a whole new level! :-)


Super Special Chocolate Milk

A hand full of ice
1 cup whole milk
¼ cup heavy cream
1 TBSP. vanilla extract
¼ to 1/3 cup chocolate syrup

Put everything into a drink shaker and shake vigorously for 30 seconds. Pour into a fancy glass and enjoy!
This would be a fun “fancy” drink for the kidlets to enjoy. :-)
I know I should “do the math” here to show the $AVING$ from making your own homemade chocolate syrup, but to be quite honest…my brain battery is running a little low right now. If any of you mathematician types out there want to have a go at it….please feel free! :-)


Right now it’s time for me to go “plug in” to some shut eye.

~Dressing - Avacado~



A cool and creamy avocado dressing with tangy buttermilk, fresh cilantro and lime juice along with some spicy jalapeno pepper ~ what else do you need to make your dressing yumm:)

For a new salad that I have been thinking about I wanted a nice and cool and creamy dressing and I was thinking about trying something a little bit different, an avocado dressing. I was originally planning on including diced avocado in the salad but I liked the idea of a creamy avocado dressing even more. I did make one quick change to the recipe by including some mayonnaise which goes fabulously well with avocados. I have to say that this avocado dressing is amazingly good; nice and creamy so so fresh and vibrant! Now I just need to resist eating it all by the spoonful so that it can make it into the salad!
Ingredients
  • 1 medium avocado
  • 1 small jalapeno*
  • 1/4 cup cilantro
  • 1 lime, juice
  • 1 green onion
  • 1 clove garlic
  • 3/4 cup buttermilk**
  • 1/4 cup mayonnaise (completely optional)
  • 1/2 tsp cumin seeds, toasted and ground
  • salt and pepper to taste
Directions
  1. Puree everything in a blender until smooth. Store in fridge and finish within a few days.
* Leave the seeds in for more heat or remove them for less.
** Use more buttermilk to make it thinner or less to make it thicker.

~Jams~



Strawberry jam (adapted from Simple Essentials: Fruit by Donna Hay) makes approximately 2-3 cups.

500g Strawberries (you can use any seasonal fruits)
500g white sugar
1/3 cup lemon juice

Place a small saucer in the freezer, you'll use this later.
Wash, hull, and halve strawberries. Place sugar, strawberries, and lemon juice in large wide-based sauce pan, such as a stock pot. Dissolve the sugar over a medium heat, and then bring to the boil. Reduce heat and simmer for 20-25 minutes. Be sure to skim off the foam with a metal spoon while the jam is simmering. At around 15-20 minutes place a small spoonful of jam on the cold saucer (from freezer) and run your finger through it. A line should remain, if it doesn't cook jam for a further 5 minutes and test again.
Once cooked carefully pour jam into hot, sterilised jars. Store in the refrigerator.

*Dates Chutney*


*INGREDIENTS*
Dates 200 gms
* Tamarind 200 gms - I use pulp of tamarind
* Jaggery 300 gms - you can use sugar as well
* Ground roasted cumin seeds 1 tsp
* Salt to taste
* Red chilli powder according to taste

COOKING DIRECTIONS
1. Remove seeds from the dates, then soak the dates and tamarind (if whole) together for 3-4 hours.
2. Obtain all the pulp and juice from these through a stainless steel sieve.
3. Boil once with the jaggery and remove.
4. Add all the other ingredients and mix with wooden spoon.

Store in bottle when cool and enjoy.

~Potatoes in oven Salad (Dip Sauce)~

Several small Dutch baby potatoes, sliced in half lengthwise (half boiled in salt water)
Salt and freshly cracked pepper, to taste
Garlic powder, to taste
Paprika,
Olive oil


Way to cook :
Preheat the oven to 350 degrees. Line a baking sheet with tin foil then coat it with cooking spray ( olive oil)

Slice the potatoes in half lengthwise then score the potato meat with a sharp knife. Season each scored potato with salt, freshly cracked pepper, garlic powder and paprika on each top.
Spray the tops of the potatoes with a bit of olive oil.
Place skin side down on the baking sheet ( or foil sheet)

Bake the potatoes for 15 minutes then flip the potatoes over (meat side down/skin side up) and continue to cook for 15 minutes or until tender and golden brown. Serve the potatoes with sour cream and green onions. Enjoy!
